Cheese, leek and fish pie

I've had a fish pie recipe here for a while now; a fairly traditional pie with eggs in it and mash on it. Recently, though, my favour has shifted to a slightly different type of fish pie with a lovely flavour. It's adapted from a Good Housekeeping recipe, and it's about time I shared it. I hope you like it too

Ingredients

Method

  1. Peel the potatoes.
  2. Cut the potatoes into 5-10 mm slices.
  3. Put into a pan of boiling water.
  4. Bring the pan back up the boil, then simmer for 5 minutes.
  5. Drain the potatoes, cover with cold water to cool them and drain again, then set them aside.
  6. Place the fish in a frying pan.
  7. Add enough milk to just cover the fish.
  8. Heat until the fish is just cooked on one side.
  9. Turn over and repeat (it shouldn't take as long this time).
  10. Flake the fish into a baking dish, throwing out any skin and bones.
  11. Top the milk up to the total 400ml in a measuring jug.
  12. Wash the leeks and cut into 1cm slices.
  13. Melt 25g butter in the frying pan the fish was cooked in.
  14. Add the leeks and cook for 3 minutes.
  15. Mix in the nutmeg (if using) and add to the baking dish.
  16. If your oven requires pre-heating, now would be a good sort of time to set to 190°C, or 170°C for a fan oven.
  17. In a pan, melt the remaining 50g butter.
  18. Add the flour, then cook stirring for a minute.
  19. Take off the heat.
  20. Gradually blend in the milk in the measuring jug. It's important to do this slowly to start off with to avoid lumps.
  21. Return the pan to the heat and cook, stirring.
  22. The sauce will suddenly thicken after a while — remove from the heat at this point.
  23. Crumble the cheese in.
  24. Stir in the cream.
  25. Add half the sauce to the baking dish.
  26. Add the prawns or other seafood.
  27. Stir the contents of the baking dish.
  28. Layer the potatoes over the filling.
  29. Pour the remaining sauce over the top.
  30. Bake at 190°C (170°C for a fan oven) for about 45 minutes.
